Chef De Partie Level 3 Advanced Apprenticeship

The Level 3 Chef de Partie Advanced Apprenticeship will prepare you to oversee a kitchen section while preparing, cooking, and finishing complex dishes. You will supervise a team, maintain high hygiene and safety standards and assist with developing new dishes. You’ll also ensure food quality, minimise waste, and contribute to improving business performance, helping the kitchen meet operational standards and increase competitiveness.

Course Content

  • Prepare, cook and finish dishes and menu items using advanced preparation methods or a variety of basic methods combined in a complex manner in line with organisation brand standards and recipe specifications.

  • Maximise yield and quality ensuring waste is minimised whilst working in a time bound environment.

  • Contribute to reviewing and refreshing menus and dishes in line with business requirements and influencing factors.

  • Oversee and supervise section staff to store, prepare, cook and finish all ingredients in line with organisation brand standards, quality and safety.

  • Operate and oversee the use of technology and specialist kitchen equipment in the production of complex dishes and menu items.

  • Coach and motivate team members positively to deliver high quality dishes and menu items.

  • Liaise with internal and external stakeholders to build team and inter-team relations, influencing behaviours of team members both back and front of house.

  • Improve competitiveness, business performance, revenue, profit margins and customer experience.

  • Monitor production in line with legislative regulations including protecting people’s health safety. and security.

  • Carry out risk assessments identifying and isolating matters of concern and ensure evaluation and reviewing is completed timely.

How much does the course cost?

There is no cost to being an apprentice. All costs associated with your apprenticeship, including the cost of training and your salary, will be paid by your employer. Funding value £10,000.

Course Content

You must:

  • Achieve Level 2 English and Maths prior to completing the End-point Assessment (EPA). If you don't already hold Level 2 English and Maths, this content will be blended into the study programme (if it is required).

  • Must be at least 16 years of age.

  • Additional ntry requirements to be set by employers, but previous achievement of Commis Chef or 24 months industry experience.

  • You will need to find an employer willing to employ you as an apprentice. Please see our apprenticeship vacancies for the latest opportunities. Please be aware, individual employers will set their own entry requirements and selection criteria for their apprenticeship job role.

Workplace assessment could include observations, assignments and dicussions. You will take part in an End-point Assessment (EPA) that will include observation, knowledge test and professional discussion.

Ability to learn on online with a laptop would be an advantage.
